kick ass vegan mac n' cheese
boil 1/2 pound to 1 pound of your favorite macaroni noodles or shells. in a large dutch oven over medium heat melt 1/4 cup vegan butter. add one small yellow onion, chopped fine and saute for a few minutes. add 1/4 cup flour and salt and pepper, and whisk for one minute. pour in 2 cups rice milk (or soy) and continue whisking. in a second, smaller sauce pan heat 2 tablespoons oil (I used extra virgin olive oil, but canola oil would be good too) and add 1/4 cup nutritional yeast, 1/4 cup cornstarch, a pinch of cayenne, 1/4 tsp garlic powder, salt and pepper and 1 cup of water. whisk until sauce thickens. pour &quot;cheese&quot; sauce into white sauce and whisk to combine. add in drained, cooked macaroni and stir. top with breadcrumbs and dot the top with bits of vegan butter. bake in 375 degree oven for twenty minutes.
